Plugin makes copy of track if track is format-converted due to device settings or if track artwork wasn't embedded (iDevices support only embedded artworks). If you are syncing play/skip counts it would be better to plug in your device. Offline allows you to sync to iTunes separately and you can sync to your device using iTunes later.
